摘    要:为了解贵州黔东南棘蛙的肌肉营养价值,采用常规氨基酸分析方法测定黔东南棘胸蛙、棘侧蛙和棘腹蛙3种野生棘蛙肌肉的氨基酸组成与含量,并以鸡蛋蛋白质为标准蛋白,以WHO/FAO氨基酸参考模式为标准对其进行氨基酸营养评价。结果表明:黔东南3种野生棘蛙肌肉的氨基酸组成一致,其中含有苏氨酸、缬氨酸、蛋氨酸、异亮氨酸、亮氨酸、苯丙氨酸和赖氨酸7种人体必需氨基酸,非必需氨基酸5种,天冬氨酸、谷氨酸、甘氨酸和丙氨酸4种鲜味氨基酸。棘胸蛙、棘腹蛙和棘侧蛙肌肉中氨基酸总量分别为84.19%、87.43%和86.12%。必需氨基酸含量占总氨基酸含量的比值分别为39.79%、40.07%和39.06%,在蛙科动物中均属于较高水平。3种棘蛙肌肉中,均以谷氨酸的含量最高,天冬氨酸的含量次之,蛋氨酸含量最低。氨基酸评分(AAS)和化学评分(CS)表明,棘蛙肌肉中第一限制性氨基酸为蛋氨酸,第二限制性氨基酸为缬氨酸。必需氨基酸指数(EAAI)显示,棘胸蛙为86.72、棘腹蛙为89.79、棘侧蛙为86.22。综合各项指标分析,贵州黔东南3种野生棘蛙具有较高的经济价值。

Abstract:The amino acids composition and content in muscle of three wild Rana species (Rana spinosa,Rana boulengeri and Rana shini) are determined by the convention amino acid analysis and the amino nutritive value was evaluated by taking egg protein as the standard protein and WHO/FAO amino acids reference model as the standard to understand the muscle nutritive value of three wild Rana species in Southeast Guizhou.Results:The amino acids composition in muscle of three wild Rana species is no difference and includes 7 essential amino acids,5 non-essential amino acids and 3 flavor amino acids.Total amino acids content in muscle of Rana spinosa,Rana boulengeri and Rana shini is 84.19%,87.43% and 86.12% respectively.The essential amino acids to total amino acids ratio in muscle of Rana spinosa,Rana boulengeri and Rana shini is 39.79%,40.07% and 39.06% separately and is at a higher level in Rana.The highest amino acid content in muscle of three Rana species is Glu,followed by ASP but Met content in muscle of three Rana species is the lowest.The AAS and CS show that the first and second limiting amino acid in muscle of Rana is Met and Val respectively.The essential amino acid index of Rana spinosa,Rana boulengeri and Rana shini is 86.72,89.79 and 86.22 respectively.In conclusion,three wild Rana species in Southeast Guizhou all have a higher economic value.
