摘    要:为紫苏优质新品种的开发利用提供参考,以贵州省农业科学院油菜研究所选育的奇苏2号和奇苏3号紫苏新品种为材料,采用田间试验与实验室品质检测相结合方法研究2个紫苏新品种籽粒的主要营养成分的含量。结果表明:奇苏2号和奇苏3号紫苏新品种的粗脂肪含量分别为49.75%和48.17%,总蛋白含量分别为16.5%和20.02%,粗纤维含量分别为29.5%和31.7%。在粗脂肪组成中,以α-亚麻酸的含量最高,分别为55.48%和61.60%;油酸次之,分别为18.02%和19.43%;亚油酸第3,分别为17.11%和10.72%;不饱和脂肪酸占比较高,分别为90.61%和91.75%。在氨基酸组成中,氨基酸总量分别为158.02mg/g和161.16mg/g,必需氨基酸占比分别为24.89%和24.25%。在矿质元素中,以钾元素含量最高,分别为798.0mg/100g和804.0mg/100g;钙元素次之,分别为728.0mg/100g和637.0mg/100g;磷元素第3,分别为630.0mg/100g和670.0mg/100g;锌元素最低,分别为8.1 mg/100g和8.8 mg/100g。β-胡萝卜素含量分别为36mg/100g和34mg/100g,VE含量分别为4.69mg/100g和4.66mg/100g。

Abstract:The content of main nutritional components in seeds of Qisu 2 and Qisu 3, two new Perilla frutescens varieties bred by Guizhou Rapeseed Institute, is determined by field test and indoor quality analysis to provide a reference for development and utilization of new quality Perilla frutescens varieties.Results: The crude fat, total protein, crude cellulose content in seeds of Qisu 2 and Qisu 3 is 49.75% and 48.17%, 16.5% and 20.02%, and 29.5% and 31.7% respectively.The α-linolenic acid, oleic acid and linoleic acid content in seeds of Qisu 2 and Qisu 3 is 55.48% and 61.60%,18.02% and 19.43%, and 17.11% and 10.72% separately.The proportion of unsaturated fatty acid in seeds of Qisu 2 and Qisu 3 is up to 90.61% and 91.75% respectively.Total amino acid content and essential amino acid proportion of Qisu 2 and Qisu 3 are 158.02 mg/g and 161.16 mg/g, and 24.89 % and 24.25 % separately.The K, Ca, P and Zn content in seeds of Qisu 2 and Qisu 3 is 798.0 mg/100g and 804.0 mg/100g, 728.0 mg/100g and 637.0 mg/100g, 630.0 mg/100g and 670.0 mg/100g, and 8.1 mg/100g and 8.8 mg/100g respectively.The β-carotene and VE content in seeds of Qisu 2 and Qisu 3 is 36 mg/100g and 34 mg/100g, and 4.69 mg/100g and 4.66 mg/100g respectively.
