蜂蜜掺假鉴别检测方法研究进展

摘    要:蜂蜜具有极高的营养价值,其掺假问题一直是监管的重点和难点。随着掺假水平的提高,蜂蜜的真伪评价难度加大,现行国家蜂蜜标准已经无法判断蜂蜜的真假,蜂蜜掺假问题已经成为全球化的难题。本文介绍目前蜂蜜掺假的主要方式和感官鉴别掺假蜂蜜的方法,综述检测掺假蜂蜜新方法的研究进展,分析比较传统鉴别方法和现代检测方法的优缺点,指出蜂蜜掺假无损检测方法具有环保、快速、简单、准确的优点,是今后鉴别蜂蜜真假的一个重要发展方向。

Research Progress on Detection Methods of Honey Adulteration
Abstract:Honey has a high nutritional value so that honey adulteration issue has been the focus of regulation and difficulty. Honey authenticity evaluation difficulty is increasing with the improvement of the level of adulteration of honey. Honey adulteration has become a problem of globalization due to current national honey standard which has been unable to determine the genuineness of honey. This paper describes the current main honey adulteration modes and honey adulterated sensory identification methods, reviews the new methods to detect honey adulteration, and analyzes the advantages and disadvantages of the traditional identification methods. It points out that the non-destructive testing will be an important development direction to identify honey because the non-destructive testing is environmentally friendly, fast, simple and accurate.
