| Abstract: | Pigmented potatoes contain plenty of anthocyanin,which have certain health care function.This paper introduces the physiological function of anthocyanin,presents the technical for recovery and purification of the anthocyanin,discusses the molecular structure of the anthocyanin in the pigmented potato,reviewes the qualitativeanalysis technique and detective method of anthocyanin. |
