巢湖鸭屠宰性能测定与性状分析

摘    要:作者旨在对初步进行本品种选育的巢湖鸭体组成性状进行测定分析,为进一步选育优质肉用巢湖鸭新品系奠定基础。选择60只(公母各30只)经本品种选育一代的10周龄的巢湖鸭,屠宰并测定胴体、半净膛、全净膛、胸肌、腿肌、皮脂、腹脂等性状指标,对巢湖鸭公母鸭间的屠体性状指标进行统计分析。结果表明,公母鸭屠宰率、全净膛率、腿肌率、皮脂率、胸肌剪切力、腿肌剪切力差异不显著(P>0.05);母鸭的半净膛率、胸肌率、瘦肉率显著高于公鸭(P<0.05);公鸭的骨肉比显著高于母鸭 (P<0.05)。相关分析显示,各屠宰重量指标间有极显著的正相关(P<0.01),屠宰率指标与体重相关不显著(P>0.05),半净膛率、腿肌重、胸肌率、心脏重与性别显著相关(P<0.05)。说明初步选育的巢湖鸭具有较好的屠宰性能和产肉性能,肉质较好。
