摘    要:以在日本食品加工领域具有领先优势的真空冷冻干燥技术为例,论述了日本食品加工领域新技术的技术特点、产品优势和具体加工过程及原理,并提出了部分新技术对我国食品加工产业发展的启示。

Abstract:By taking vacuum freeze-drying technology which has leading advantages in field of food processing in Japan as examples,technical characteristics,product advantages,specific processing processes and principles of new technologies in field of food processing in Japan were discussed,and enlightenments of some new technologies to development of food processing industry in China were also put forward.
