| 摘 要： | 欧李是蔷薇科樱桃属的一种极矮生灌木果树,具有极高的利用价值,可以进行果品的深加工。在分析欧李贮藏加工品种的研究现状、果实的采收与采后处理的基础上,重点阐述了欧李产品(欧李汁、糖水欧李罐头、欧李果脯、欧李蜜饯)的加工流程和工艺要点,旨在为欧李的产业化发展提供有益的参考。

| Abstract: | Cerasus humilis(Bge)sok is a kind of dwarf shrubby fruit tree, wh ich belongs to rosaceae. It has super value in use and can be processed. In this paper, the progress, picking and process of cerasus humilis were introduced. Its process flow and technics outline of juice, can, preserved fruit and sweet meat were expounded in detail. This will be benefit to industrialization exploit ure of cerasus humilis. |
