牛肉欧姆加热解冻试验研究

摘    要:根据已有资料自行设计和组装了多波形可变频率欧姆加热试验系统及加热容器。试验选用了3种不同波形,即锯齿波、矩形波、正弦波的交流电流,并分别在不同频率下,试验研究了冷冻牛肉在其作用下解冻过程中交流电频率对其电导率σ-温度Τ图形以及加热速率的影响,试验表明:在3种波形中,矩齿波加热速率最快,解冻的时间最短,其次为正弦波,最后为矩形波;对于频率来说,频率越高,解冻速率越快。

Abstract:The multi-frequency ohmic heating test system and heating container were designed.With this test system, the effect of frequency and wave form on the electrical conductivity-temperature profiles and heating rate during omhic thawing beef was studied .The results showed as follows:Among the three wave forms, the heating rate of sawtooth wave form was the shortest .The sine wave form was the second.And the square wave form was the last .As frequency increased, the heating thawing rate was faster .
