摘    要:EDTA是一种良好的金属离子螯合剂。本试验分别用不同浓度的EDTA水溶液培养大麦,并与水培养做对比研究。结果表明,EDTA可以通过螯合维持蛋白酶活力所必须的金属离子降低麦芽中蛋白酶活力,并改变麦芽中各蛋白含量。运用SDS-PAGE电泳进一步分析麦芽蛋白,从其组分的变化上分析出贮藏蛋白向可溶性蛋白转化的具体方式。

Abstract:EDTA is a kind of good metal ions chelating agent.Different concentrations EDTA aqueous solution were used to culture barley,and compared with ones cultured by water.The results showed that EDTA could reduce the protease activity by chelating metal ions which are required to hold the protease activity,and change the content of each protein in malt.Using SDS-PAGE to analyze malt protein further could find concrete way of the transform from reserve protein to soluble protein in the change of protein component...
