网箱养殖与野生黄姑鱼肌肉营养成份比较

摘    要:分析测定了网箱养殖和野生环境下黄姑鱼的肌肉营养组成,对两者的营养成份进行比较,采用现时的国家标准方法测定粗蛋白、粗脂肪、灰分、矿物质、氨基酸、脂肪酸。结果表明:野生和网箱网箱养殖黄姑鱼肌肉中的粗蛋白质含量为18.57%和17.55%;粗脂肪含量为1.86%和0.91%;灰分含量为1.81%和1.51%;常量及微量元素种类均比较齐全;18种氨基酸总量为22.03%和20.20%,其中8种人体必需氨基酸含量为8.46%和9.31%,4种呈味氨基酸含量为7.56%和8.14%;主要脂肪酸有5类12种,其中不饱和脂肪酸占脂肪总量的61.6%和63.5%,二十碳五烯酸(EPA)与二十二碳六烯酸(DHA)两者之和的含量为10.7%和10.1%。结论网箱养殖黄姑鱼肌肉中营养组成与野生的比较接近,其蛋白质含量较高,氨基酸种类齐全,必需氨基酸和呈味氨基酸含量较高,脂肪酸含量丰富,并含有丰富的人体所需的微量元素。

Analysis of Nutrition in the Muscle of Wild and Cultured Nibea albiflora

Abstract:The nutrition in the muscle of wild and cultured Nibea albiflora were measured and compared in this paper.The contents of crude protein,crude fat,ash,minerals,amino acids,fatty acids were measured according to the current national standard method.The total amount of the crude protein,crude fat and ash,in wild and cultured Nibea albiflora were 18.57% and 17.55%,1.86% and 0.91%,1.81% and 1.51%,respective-ly.Species of constant and trace elements were relatively complete;The total amount of 18 amino acids were 22.03% and 20.20%,among which the content of 8 essential amino acids were 8.46% and 9.31%,and the content of 4 delicious amino acids were 7.56% and 8.14%.In addition,12 major fatty acids within 5 species were detected.The ratios of the PUFA,total amount of DHA and EPA to the total fatty acids in fatty acids were 61.6% and 63.5%,10.7% and 10.1%,respectively.The Nutrition in the muscle of cultured Nibea albiflo ra are close to that of the wild,with high content of proteins,essential and delicious amino acids,and also rich in fatty acids and essential trace elements.
