摘    要:荞麦是我国古代重要的粮食作物和救荒作物。清至民国时期,江西地区的荞麦种植有着深刻的自然条件和社会条件,在增加江西地区粮食产量、丰富饮食多样性等方面发挥了重要作用。本文以清至民国时期的江西地区诸多方志所载资料为基础,对清至民国时期江西地区荞麦种植的发展状况、动力与影响进行系统性的梳理与总结。

Abstract:Buckwheat was an important type of grain and famine relief crop in ancient China.During the period from the Qing Dynasty to the Republic of China,Jiangxi had a good natural and social condition for planting buckwheat,which played an important role in increasing grain production and enriching food diversity.Based on the local records from the Qing Dynasty to the Republic of China,this paper systematically reviews and summarizes the development,impetus and influence of buckwheat cultivation in Jiangxi Province.
