醋糟料平菇蛋白质营养价值定量分析与评价

摘    要:本文按照蛋白质的质量标准,运用数学计算公式,分别计算出醋糟平菇(试验)和棉籽壳平菇(对照)的蛋白质营养价值的三项指标值.通过定量分析,结果表明:虽然醋糟料平菇的蛋白质含量低于棉籽壳平菇,但其蛋白质质量却高于棉籽壳平菇,这说明醋糟料并不会降低平菇的质量,从而为进一步推广使用醋糟料栽培平菇提供了依据.

Abstract:In this paper pleurotus ostreatus cultivated in the cotton shell is used as contrast, we evaluate the protein quality of pleurotus ostreatus growing in the vinegar waste on the basis of the standard of protein quality. The results indicate that although the protein content of pleurotus ostreatus growing in the vinegar waste is lower than of pleurotus ostreatus growing in the cotton shell. Its protein quality is higher than that of pleurotus ostreatus growing in the cotton shell. In other wards, using.vinegar waste as a substitute for cotton shall to cultivate pleurotus ostreatus does not reduce the protein quality. The result provide the scientific basis for the new technique of using vinegar waste to cultivate pleurotus ostrearus.
