日本红叶小檗红色素稳定性试验

摘    要:本文报道日本红叶小檗(BerberisthunbergiiVar,atropurpureachenault)叶片中红色素系列研究(一)──稳定性试验。研究表明:在pH5以下,该色素颜色几乎不随pH改变而改变,当pH大于5时,色素变质,溶液变为黄褐色。该色素在pH等于3的乙醇溶液中耐热,耐氧化,但耐光性较差;然而该色素在pH等于3的水溶液中却耐光照.金属离子钠、钾、钙、镁对该色素无不良影响,但铁离子则会引起色素的退色,应用中应加以注意。

Abstract:The article deal with the experiment and study on the stability of the red pigment of Berberis Thunbergii Var Atropurpurea Chenault. It is one of a series of study on the pigment. The experiment provide some basis for further exploitation. The result show the color of the pigment hardly change along with change of pH, pH is less than five; but pigment solution change to yellow-brown, then the pH is larger than five. At pH 3 in ethylalcohol, the pigment is heat-resistant, oxidation-resistant, but the light -resistance is not very good. But at pH 3 in water, it's light-resistance is very good and heat-resistant, oxidation-resistant. Metal ions such as: Na , K , Ca and Mg have no effeCt on thepigment,but Fe and Fe ions can decolour the pigment. Attention is called during utilization.
