纯蜂蜜与掺假蜂蜜的红外光谱鉴别研究

摘    要:目的]寻找快速鉴别高质量蜂蜜的方法.方法]对不同品种的纯蜂蜜及常见掺假蜂蜜进行红外光谱分析。结果]结果表明,纯蜂蜜的红外光谱基本相同;掺有葡萄糖、黄糖、蔗糖等的假劣蜂蜜红外光谱在波数1200~900cm^-1和600~400cm^-1与纯蜂蜜有突出的区别特征.结论]该方法可用于鉴定纯蜂蜜与掺假蜂蜜.

Abstract:Objective] The rapid test method of true and false honey was explored. Method] The pure and false honey of the different brands in market was tested with the method of infrared spectrum.Results] The same result of infrared spectrum was showed in the true honey products and there were the peak value of infrared spectrum of 1 200-900 cm-1 and 600-400 cm-1 in the honey products mixed with glucose,yellow sugar,sugar and others,which was significantly different with the pure honey products.Conclusion]The met...
