土鸡和笼养鸡的鸡蛋成分对比分析

摘    要:分别测定36个笼养鸡蛋和36个土鸡蛋的物理性状和化学成分,结果表明,土鸡蛋的蛋黄比例、蛋黄颜色、蛋白高度、蛋壳中磷含量和8种必需氨基酸总含量分别比笼养鸡蛋高23.09%、54.1%、17.57%、88.89%和11.34%;土鸡蛋的蛋壳强度更高;而部分微量元素的含量差别不明显。结果显示出土鸡蛋的营养价值比笼养鸡蛋高。

Abstract:Physics characters and chemical components of eggs between randomly-rearing native hen and cage-rearing commercial hen were determined. The results shows that proportion of yolk, yolk colour, haugh unit, phosphor in eggshell and essential amino acid more 23.09%、54.1%、17.57%、88.89% and 11.34% than those of caging commercial hen, eggshell intensity of native hen egg is bigger; Content of a few trace elements are not difference. It indicated that nutrition value of native hen egg better than those of caging commercial hen's.
