养殖大黄鱼和天然大黄鱼的理化指标比较

摘    要:通过对养殖和天然大黄鱼的理化指标及其变化规律的研究,为养殖大黄鱼的肉质改善提供理论依据。养殖和天然大黄鱼的体长、体质量以及水分、脂肪等指标的测定采用常规分析法,并对大黄鱼的肥满度进行分析。养殖大黄鱼体长和体质量的自然对数值成正比;无论是养殖还是天然大黄鱼,其肌肉中水分含量和脂肪含量成反比;肥满度的大小与脂肪含量成正比,但两者的变化范围以及变化速率都不尽相同。养殖和天然大黄鱼的主要差别在于其脂肪的变化,养殖大黄鱼的肉质改善重点在控制其脂肪含量上。

Abstract:The change of physichemical parameters of both cultured and wild Yellow croaker was studied,intending to provide theoretic basis for improving the flesh texture of cultured Yellow croaker.The specimen of cultured and wild Yellow croaker was obtained from Luoyuan bay and Taiwan strait.The body length,body weight,water and fat content was measured by commonly method,and analyzing the thickness coefficient.The results indicated that natural logarithm of body length of cultured Yellow croaker was positively correlated with that of body weight.For both cultured and wild Yellow croaker muscle,water content negative correlates with fat content,while the thickness coefficient positively correlates with body fat content.But the variation range and the variation rate for cultured Yellow croaker was different from that of wild yellow croaker.However,the difference of cultured and wild Yellow croaker was the changes of fat.From the present study,we conclude that body fat content decrease is significant in improving the flesh texture of cultured yellow croaker.
