无公害养殖产品质量控制体系探讨

摘    要:文章阐述了养殖产品存在的质量安全风险因子为兽药残留,比较了国内外对养殖产品兽药残留的控制现状,以猪肉为例,对比了我国无公害产品标准与欧盟食品标准的差异,并对无公害养殖产品质量安全检测技术进行论述。最后提出建立养殖信息反馈系统、HACC管理体系、可追溯性产品识别系统及长效监管机制,应用快速检测的方法进行企业自控,行政职能实验室配备先进仪器进行监督与确认,分层次建立企业自检、政府监督抽检和检测机构认证检验的三重质量安全控制体等建议,以确保养殖产品质量安全。

Abstract:The present work is an attempt to study the risk factors of veterinary drug residue and quality of aquaculture products. The differences in pellution-free product standards in China and European Union were compared and the quality detection methods for aquaculture products were also discussed. On the basis of data collected in our study, some suggestions have been put forward which includes: the constructions of information feedback system for aquaculture, HACCP Management System, traceability system for product identification and supervision mechanism, use of rapid detection system for enterprises self-control. The functional laboratories should be equipped with advanced equipment for monitoring and verification of the fishery products. The triple quality security control system of enterprise self-test, supervision of samples by government authorities and certification of the tested products should be ensured at different steps to ensure the quality safety of aquaculture products,
