摘    要:为了研究气调贮存和解封后使用过程中片烟多酚氧化酶(PPO)活性的变化及探究烟草中PPO的活性来源,以5种氧气浓度气调醇化的3种烟草片烟为研究对象,分别在气调醇化的18个月、21个月和26个月时,取样测定气调贮存和解封1~3个月过程中片烟PPO的活性;并通过对片烟表面微生物的灭菌处理,研究片烟气调过程中PPO的来源。结果表明,低氧气调处理对PPO的活性有一定的抑制效果。解封后的2个月内,4种低氧处理组片烟PPO的活性降幅均大于正常氧浓度处理组;且对于三种产地的片烟而言,采用2%~4%的氧气浓度气调处理都能较好地抑制PPO的活性。本研究证明了片烟的PPO活性来源于片烟内部而非片烟表面微生物,2%~4%的低氧气浓度气调处理能有效降低PPO活性,有利于片烟中多酚类物质的保留,为片烟贮藏和解封后的生产和使用提供了一定的理论基础。

Abstract:In order to study the changes of polyphenol oxidase (PPO) activity in tobacco strips during controlled atmosphere storage and after unsealing. and to explore the source of PPO activity in tobacco, three kinds of tobacco strips alcoholized under five kinds of oxygen concentration were taken as the research objects, the PPO activity in tobacco strips during controlled atmosphere storage and after unsealing for 1~3 months was determined at 18 months, 21 months and 26 months, respectively. The source of PPO in the process of smoke adjustment was studied by sterilization of microorganisms on the surface of cigarette. The results showed that low oxygen treatment had a certain inhibitory effect on PPO activity. Within 2 months after unsealing, the PPO activity of the four low oxygen treatment groups decreased more compared with the normal oxygen concentration treatment group. For the three kinds of origin of tobacco, 2%~4% oxygen concentration of modified atmosphere treatment could better inhibit the activity of PPO. This study proved that the PPO activity of the tobacco sheet was derived from the microorganisms inside the tobacco sheet rather than the microorganisms on the surface of the tobacco sheet. The low oxygen concentration of 2%~4% could effectively reduce the PPO activity, which was beneficial to the retention of polyphenols in the tobacco sheet. This study provides a theoretical basis for the production and use of tobacco sheet after storage and unsealing.
