摘    要:[目的]分离和鉴定Viili中的主要乳酸菌,为开发新型乳制品提供依据。[方法]首先,对Viili中的细菌进行活化、分离和纯化;然后,接种于相应的培养基上进行培养,从生长特性、形态特征以及生理生化特性对分离菌进行鉴定。[结果]Viili中主要含有乳酸乳球菌乳酸亚种(L.lactissub sp.lactis)、乳酸乳球菌乳脂亚种(L.lactissub sp.cremoris)、乳酸乳球菌乳酸亚种二乙酰乳酸亚种(L.lactissub sp.diacetylactis)和肠膜明串球菌乳脂亚种(L.mesenteroidessub sp.cremoris)。[结论]Viili中乳酸菌的种类比较丰富,其中乳酸乳球菌二乙酰乳酸亚种和肠膜明串球菌乳脂亚种在我国乳制品中很少分离到。

Abstract:[Objective] to isolate and identify the main lactic acid bacteria,and provide a basis for developing novel dairy products.[Method] The lactic acid bacteria from Viili were first activated,isolated and purified,and then inoculated in the corresponding culture medium.The isolates were identified according to their growth,morphology and physiological and biochemical characteristics.[Result] The results showed that the main bacteria in Viili were L.lactis subsp.lactis,L.lactis subsp.cremoris,L.lactis subsp.diac...
