摘    要:柑橘类精油是一种经济、环保、天然的防腐剂,可作为其他抗氧化防腐剂(亚硝酸钠、硝酸盐、苯甲酸盐等)的替代品应用于食品保鲜。柑橘类精油主要来源于柑橘类水果的果皮,从果皮中提取精油不仅可以充分利用果蔬副产物,还可以减少由废弃果皮造成的环境污染问题。本文概述了柑橘精油的主要成分、提取方法、抑菌作用及其在食品保鲜中的应用。

Abstract:Citrus essential oil is an economic,eco-friendly and natural preservative,which can take the place of chemical preservatives such as sodium nitrite,nitrate and benzoate in food preservation.Citrus essential oils are mainly derived from the peel of citrus fruits.Extracting essential oils from the peel can not only make full use of resources,but also improve the environmental problems caused by discarded peel.In this paper,the main components of citrus essential oil,extraction methods,antimicrobial property and its application in food processing and preservation were reviewed.
