摘    要:以新鲜甘蔗梢中剥取的嫩脆甘蔗笋为原料,分析甘蔗笋中主要营养成分及其含量,测得每100 g鲜甘蔗笋含总可溶性固形物7.2 g,还原糖2.67 g,灰分1.3045 g,磷81.5 mg,蛋白质3.653 g,氨基酸2.35 g、总酸2.65 g、维生素C 3.8 mg,营养非常丰富.并研制甘蔗笋软罐头生产工艺,用正交试验...

Abstract:The tender sugarcane shoots in the fresh sugarcane was stripped as new food raw material,its nutrition ingredient was tested,and the processing production of soft-canned sugarcane shoots was developed.The results showed that the content of fresh raw sugarcane shoots per 100 g were as following: total soluble solids 7.2 g,reducing sugars 2.67 g,ash 1.3045 g,phosphorus 81.5 mg,protein 3.653 g,amino acid 2.35 g,total acid 2.65 g,vitamin C 3.8 mg.Its nutrition was very rich.And its the best interests liquid for...
