淮山药泡腾片固体饮料的研制

摘    要:[目的]开发一种淮山药保健饮料。[方法]以淮山药、奶粉为主要原料,研究了淮山药泡腾片固体饮料的生产工艺。[结果]以糖液或淀粉浆作粘合剂,易发生结块;以PVP作为粘合剂,颗粒不易结块、干燥迅速、产品溶解迅速。因此选用3%PVP的75%乙醇溶液作粘合剂。硬脂酸镁、滑石粉会造成溶液混浊;聚乙二醇6000对于奶片的泡腾溶解性无不良影响,其适宜添加量为3%。奶油香精:苹果香精:乙基麦芽酚为1:2:1时,淮山药泡腾片溶解液风味较好,其适宜添加量为0.2%~0.3%。选用蛋白糖作甜味剂,其适宜添加量为0.6%。淮山药泡腾片固体饮料的优化配方为:速溶淮山药粉40%+奶粉15%+柠檬酸5.4%+NaHCO3 4.5%+PVP3%+PEG6000 3%+蛋白糖0.6%+复合香精0.2%-0.3%。[结论]该研究为提高淮山药产品的科技含量和开发利用山药资源具有积极意义。
