波纹巴非蛤无水低温保活过程中的生化变化

摘    要:目的]以波纹巴非蛤为材料,研究其在低温无水保活过程中的生化变化。方法]采用低温保活的波纹巴非蛤并置于4℃条件下进行保藏,测定其在此过程中的营养成分、腺苷三磷酸(ATP)及乳酸的变化。结果]采用此法可使波纹巴非蛤保活5 d,水分、灰分、蛋白质、脂肪的含量略有降低,氨基酸的变化不明显,ATP变化呈先下降再上升,然后再下降的趋势,乳酸变化呈先上升后下降的趋势。结论]低温无水法是保活波纹巴非蛤的一种良好的方法。

Abstract:Objective]The biochemical changes of the Paphia undulate in keeping alive without water and at low temperature condition were studied.Method] The live mussel was packed in low temperature condition.It was stored in 4 ℃ and its nutrition,ATP and the lactic acid changes were determined.Result] Paphia undulate could be alive for about 5 days by this methods.Contents of water,ash,protein and fat decreased slightly,while amino acids almost had no change.ATP contents decreased at first,then increased,and decreased finally.Lactic acid contents increased at first,and then decreased,and then decreased.Conclusion] The technology of keeping Paphia undulate alive without water and at low temperature condition was a good method.
