茄子脱水工艺及模型研究

摘    要:采用带人工气候调节箱的热风干燥试验台,对茄子进行了薄层正交试验,得出了影响因素的主次顺序和最优水平,从而得到较佳脱水工艺。并讨论了不同烘温下的薄层脱水方程,得出其模型为:MR=e×p(-kdt~n),Kd=6.9×10~5c×p(-1897.99/T),n=-1.85+0.0081T。

Abstract:In the paper, the drying tesl—bed with an artificial weather box was used for thin—layer drying orthogonal tests on eggplant. Affecting factors and levels were discussed, and the best technology was obtained. The most suitable model has been selected. And the coefficients of the model have been determined.
