摘    要:利用微波技术提取红枣色素新工艺的研究结果表明.红枣色素在波长320nm处有最大吸收峰,微波提取红枣色素的最佳工艺条件为:以50%(pH3)乙醇为提取剂,在微波火力中火、提取时间80s、料液比1:15,提取次数为3次时其色素提取效果最好,提取率可达89.9%。

Abstract:The paper studied the new technology to extract the jujube pigment from jujube with microwave technology. The results showed that, the OD max of the jujube pigment was 320 nm ,and the optimal conditions to extract the jujube pigment with microwave were: extraction solution of 50% (pH 3) ethanol, microwave fire at mid fire, extraction time for 80 s, material/ extraction solution ratio of 1∶15, extraction for 3 times. The pigment yield of extraction reached 89.9%.
