摘    要:信阳毛尖茶是我国传统名茶之一,品质优异。对信阳毛尖茶的主要化学成分茶多酚类及儿茶素类、氨基酸、咖啡碱、可溶性糖、叶绿素等与品质的关系进行了探讨。结果表明,信阳毛尖茶的茶多酚含量、儿茶素含量及非酯型儿茶素比例较高,氨基酸含量、咖啡碱含量、可溶性糖含量也比较高,形成了信阳毛尖茶鲜浓、爽口、耐泡的滋味特征;叶绿素含量高于多数嫩度相近的名绿茶,使其具有干茶色泽翠绿的品质特征。

Abstract:Xinyang maojian tea is one of famous traditional green tea in China The qulity of Xinyang maojian tea is outstanding. Relation between main chemical components and quality of xinyang maojian tea were discussed. Chemical substance of quality characteristics of Xinyang maojian tea were preliminarily revealed.
