摘    要:用固相微萃取技术和气相色谱-质谱联用仪对8种苹果中的香气成分进行了分析测定.结果表明:试验鉴定出了33种香气化学成分,其中酯类28种,醇类3种,烯烃类2种;其中含量较高的共性成分有:2-甲基丁酸丁酯、2-甲基丁酸己酯、己酸己酯、α-法呢烯,这4种成分可以考虑作为苹果品质评价的指标性成分.

Abstract:Aroma components of 8 cultivars of apple fruit were determined by the method of solid-phase microextraction(SPME) coupled with gas chromatography-mass spectrometry(GC/MS).33 components consisted of 28 esters,3 alcohols and 2 alkenes were identified from 8 cultivars of apple.The common and major compounds included n-butyl 2-methylbutylate,hexyl 2-methylbutyrate,hexyl caproate and a-farnsene.It is suggested that components n-butyl 2-methylbutylate,hexyl 2-methylbutyrate,hexyl caproate and a-farnsene can be guided as the components for quality evaluation of apple fruits.
