茶树新梢“持嫩性”研究进展

摘    要:通过探讨嫩度与“持嫩性”的关系、总结前人关于嫩度评价方法的研究进展,提出了嫩度评价体系的建立是开展“持嫩性”专项研究的基础与前提,认为质构仪可以用于评价新梢的嫩度,“持嫩性”将成为茶业科学领域的研究热点。

Abstract:Through exploring the relation between tenderness and tenderness-keeping ability of tea shoots, the studies of tenderness assessment method by ealier scholars were summarized. The construction of tenderness assessment system was the foundation and premise of carrying out the research of shoot tenderness-keeping ability. Texture analyzer can be used to assess the tenderness of the tea shoot. shoot tenderness-keeping ability will become another research focus in the field of tea science and industry.
