摘    要:以普洱熟茶为材料,以水为溶剂,利用正交法优化茶多酚的提取工艺.结果显示,普洱熟茶茶多酚提取的最佳工艺为:固液比1:25,浸提时间45 min,提取温度80℃.此提取工艺具有高效省时、操作简便、提取结果稳定等优点,是一种较好的普洱熟茶多酚提取方法.

Abstract:Taking the fermented Pu-erh tea as experiment materials,water as extraction solvent,the extraction process of fermented Pu-erh tea polyphenols was improved by orthogonal optimization method. The result showed that the best combined condition was 1∶25 of solid-liquid ratio,45 min of extracting time and 60 ℃ of extraction temperature.The extraction process was a high efficiency,rapid,convenient and steady way to extract TP from fermented Pu-erh tea.
