摘    要:本文调查了湖北省32份芝麻样品,检出真菌19个属,80个种(群、系).第一次在国内分析研究了芝麻的真菌区系及其演替规律.认为导致芝麻在储藏期间品质下降或发生霉变的真菌主要是杂色曲霉、白曲霉、灰绿曲霉、黄曲霉、米曲霉、桔青霉、顶青霉、烟曲霉和黑曲霉等.指出了黄曲霉等产毒真菌污染芝麻对人类的潜在危险性以及加强黄曲霉毒素监测工作的必要性.论证了用真菌菌量预测芝麻霉变发生的可信性和可行性.

Abstract:Eighty-two samples of sesame have been investigated in Hubei. Nineteen generas and eighty species (groups, series) of fungi have been detected. This is the first to study the mycoflora of sesame and its evolution principle in China. This study showed that Aspergillus versicolor, A. candidus, A. glaucus, A. flavus, A. oryzae, Penicillum citrinum, P. corylophilum, A. fumigatus and A. niger are the main fungi to cause sesame quality to declined and mildew. We also discussed the potential danger of toxigenic fungi, such as A. flavus to harm human, and the necessity to inspect Aflatoxins. This article expounded and proved the feasibility and reliability to calculat sesame mildew by the quantity of fungi.
