日本占领时期的台湾乳畜饲养与乳品生产

台湾近代开埠通商之前，本地居民（包括原住民及从大陆来的移民）基本没有饮食奶制品的习俗。1860年《天津条约》签订后，台湾北部的淡水、鸡笼（今基隆）成为通商贸易港。台北、基隆、淡水等地，开始少量饲养本土黄牛来挤奶，提供给来台西洋人饮用。1895年，来台从事家畜养殖的日本人，陆续引进西洋奶牛，进行具有近代畜牧场性质的奶牛规模化饲养。日本统治当局成立了专门的畜牧科研机构，用引进的奶牛与本地黄牛进行杂交选育，先后培育出多个适合台湾饲养的奶牛品种。1943年为战前台湾的奶牛饲养高峰，当年存栏奶牛1777头，年产牛奶2300吨。
