云南和广西人工种植香菇中微量元素的测定

摘    要:目的]从微量元素角度对广西和云南人工种植香菇的营养价值作评价,为了解不同地区人工香菇的药效和营养价值提供科学依据。方法]采用火焰原子吸收光谱法测定广西和云南人工种植香菇中Zn、Co、Ni、Cu、Fe、Cr、Li、Ca和Mg的含量。结果]2种人工香菇中Mg、Ca、Li、Zn、Fe和Cu含量较高,尤其Mg含量很高,Co、Ni和cr含量较低,广西和云南香菇的Zn/Cu值分别为6.3和3.3。结论]广西和云南人工香菇中含有丰富的人体所需的微量元素,Zn/Cu值与抗癌中药中微量元素的含量有Zn高Cu低的关系相同,表明这2种香菇具有较高的营养价值,食用香菇可摄入人体所必需的微量元素。
