摘    要:香椿具有丰富的营养功能和良好的发展远景,但其不易贮藏的特点阻碍了香椿的产业化进程。综述了香椿产业的发展现状,从传统加工和工业化加工2方面介绍了香椿的加工技术及其制品,针对香椿制品存在的传统加工短板、营养物质流失和不能满足周年需求等问题,提出了相应的解决办法,并对其发展前景进行了展望。

Abstract:Abstract: Toona sinensis has rich nutritional functions and good development prospects, but its characteristics of uneasy storage have hindered the industrialization of Toona sinensis. The present situation of the development of Toona sinensis industry was summarized. The processing technology and products of Toona sinensis were introduced from 2 aspects of traditional processing and industrial processing. In view of the problems existing in Toona sinensis products, including the traditional processing short board, the loss of nutrients and the inability to meet the annual demand, the corresponding solutions were put forward, and the prospect of its development was made.
