我国29省、市、自治区市售纯牛奶亚硝酸盐含量普查

本研究采用GB5009.33-2010中第三法,即《乳及乳制品中硝酸盐及亚硝酸盐的测定》检测了采集自我国29个省、市、自治区以当地所产原料奶为原料生产的不同品牌的市售超高温灭菌液态全脂纯牛奶（UHT奶）及巴氏灭菌液态全脂纯牛奶（巴氏奶）共计112个样本的亚硝酸盐含量。结果表明,（1）检测的112个牛奶样本的亚硝酸盐含量介于0～0.175mg/kg之间,均低于我国农业行业标准NY 5045-2008、NY/T 657-2007、NY5140-2005和阿根廷国家所规定的牛奶中亚硝酸盐（以NaNO2计）含量≤0.2mg/kg的最高限量,说明我国液态纯牛奶亚硝酸盐含量安全;（2）我国液态纯牛奶亚硝酸盐含量变化呈明显的地域性分布;（3）我国液态纯牛奶亚硝酸盐含量与品牌基本无关。

A General Survey of Nitrite Content in Pure Milk from Market in China

The 112 milk samples were collected from 29 different areas,and they were different brands of UHT and Fresh milk produced in each area.The nitrite content in milk samples was detected by the third method in GB5009.33-2010 and that was the way of determining nitrate and nitrite in milk and dairy products.The result showed that the nitrite content in all samples ranged from 0 to 0.175mg/kg,which was lower than 0.02mg/kg,issued by China agricultural industry standard NY5045-2008,NY/T 657-2007,NY 5140-2005 and Argentina which set the nitrite maximum limit in milk,so the nitrite content in milk from market in China was ina safety range.Moreover,the nitrite content in milk samples was not related to the commercial brand,but the nitrite content in milk samples showed obviously regional distribution.
