蔬菜汁对亚硝酸盐的清除作用研究

摘    要:为了研究黄瓜、水萝卜、西红柿、白萝卜、西葫芦5种蔬菜汁对亚硝酸盐的清除作用。榨取新鲜蔬菜汁,在模拟人体胃液的条件下,采用分光光度法测定不同浓度的单一蔬菜汁和混合纯蔬菜汁对亚硝酸钠的清除能力。试验表明,蔬菜汁清除亚硝酸盐能力与浓度呈正相关,单一蔬菜汁中黄瓜汁的清除能力达88.14%,水萝卜汁77.88%,西红柿汁64.96%,白萝卜汁56.11%,西葫芦汁的清除效果较差,最高为18.94%;混合蔬菜汁的清除能力比单一蔬菜汁高,其中黄瓜汁和水萝卜汁混合可达87.08%,黄瓜汁和西红柿汁85.31%,水萝卜汁和西红柿汁混合80.71%,白萝卜和西葫芦清除率最低,为34.34%,5种蔬菜汁混合清除率达78.23%。试验所选蔬菜汁对亚硝酸盐有一定的清除能力,混合蔬菜汁的清除能力高于单一蔬菜汁。
