摘    要:通过检测茶树菇贮藏过程中气调包装盒内的O2、乙醇、乙烯的气体浓度和茶树菇蛋白质含量的变化,探讨硅窗大小对气调保鲜贮藏茶树菇的效果及适宜的贮藏条件.结果表明:贮藏温度为3℃和初始气体浓度5% O2 、10% CO2时,硅窗面积0.9cm2,能保证在整个贮藏期间包装盒内的O2浓度在1%以上,茶树菇不出现厌氧呼吸;乙烯气体不在盒内大量积累,避免了茶树菇的蛋白质含量迅速下降.

Abstract:The gas concentration of O2,ethanol and C2H4 in the modified atmosphere packages and the protein content of Agrocybe chaxingu were assayed.And the effect of MAP with different silicon gum film windows and optimum conditions for storing Agrocybe chaxingu were evaluated.The results showed that while the packages with a 0.9 cm2 silicon gum film window at 3 ℃ in the 5% O2,10% CO2 for storing Agrocybe chaxingu,the concentration of O2 was kept above 1% and the anaerobic respiration did not occurred during storage.And the ethylene did not accumulated so as to avoid the sharp dropping of the protein content of Agrocybe chaxingu.
