| Abstract: | Carnosine is a water-soluble dipeptide,it exists in animal skeletal muscle and brain.It has various biological functions.The structure,metabolism,physiological function of carnosine and its mechanism were summarized in this article.The application of carnosine was prospected at the end of this article. |
