摘    要:研究结果表明虎奶菇液体发酵及其发酵液抑菌与培养成分有关,适宜氮源为黄豆粉,碳源为甘露醇。黄豆粉含量15g.L-1、甘露醇含量25g.L-1时虎奶菇发酵液抑菌效果最好。虎奶菇发酵液对细菌特别是革兰氏阳性菌有明显的抑制作用,而对酵母、霉菌没有抑制作用。

Abstract:The experimental results showed that the liquid fermention of pleurotus tuber-regium and its antimicrobial had the relations with the compositions.The optimal N-sorces was soybean flour and the optimal C-sources was mannitol.When the compositions of liquid fermentation was soybean flour of 15 g.L-1 and mannitol of 25g.L-1,the fermentation broth of Pleurotus tuber-regium inhibited the effect the best.The fermentation broth of Pleurotus tuber-regium showed significant antimicrobial actions on bacteria,especially on Gram-negative bacteria,but not antimicrobial actions on yeast and mould.
