Abstract:Model tests and productive experiments were carried out to study refined profit,physical property and adsorptive capacity of the dhool for scented tea,such as roasted green tea(RGT),baked green tea(BGT)and baking and roasting combined green tea(SBRGT),made from the identical fresh leaves.Results showed that both the refined profit and the specific surface area of three dhools were in the order as RGT>SBRGT>BGT.The adsorbing speed and maintaining ability of aroma were related to the water content of dhools.The ability of adsorbing aroma increased with the water content of dhools in the range of 5 %—25 % ,while the highest ability of adsorbing aroma(desorption at 120 ℃ ,4 h)was got at 20 % water content.The adsorbing speed and maintaining ability of aroma were in the order as BGT>SBRGT>RGT.The balance of adsorption for BGT was the slowest one,RGT and SBRGT were almost similar.The balance of desorption for RGTwas the fastest one,BGT and SBRGT were almost similar.Above all,SBRGT was the best dhool for scented tea,and BGT was still a suitable one.
