人工养殖鲟鱼生长与肌肉品质的研究进展

鲟鱼肉和卵极具营养价值,鲟鱼养殖规模稳定扩大,中国已经成为世界上最大的鲟鱼养殖国家。尽管国内外在鲟鱼保护生物学和应用技术方面取得了一系列科研成果,但对养殖鲟鱼的生长和肌肉品质的发育规律所知甚少。本文综述了国内外养殖鲟鱼异速生长模式和肌肉品质分析的研究现状,发现现有鲟鱼生长于肌肉品质的研究主要集中于幼鱼或某一个生长期,缺少系统性和完整性。因此,建议针对主要养殖鲟鱼品种,从幼鱼到成鱼系统开展养殖鲟鱼生长与肌肉品质变化规律的研究,揭示鲟鱼肌肉品质的生长发育规律。

Review on Growth and Muscle Quality of Cultured Sturgeons

Because meat and caviar eggs of sturgeon have high nutritional value, the sturgeon aquaculture has been developing at a steady speed in China. As a results, China has become the largest country of sturgeon aquaculture. Although a number of basic research findings in conservation biology and applied technology of sturgeon were achieved, little is known about growth pattern and development mechanism of muscle quality of farmed sturgeons. This paper reviewed the current status of research on allometric growth pattern and muscle quality of sturgeons, and found previos studies which focused on juvenile sturgeons or a special period is lack of integrity and systematicness and suggested that a mass studies to address development mechanism from juvenile to adult of muscle quality of the mainly farmed sturgeons should be encouraged.
