人参果营养成分、采后生理及贮藏保鲜方式研究进展

摘    要:人参果又名香瓜茄,新鲜的人参果水分含量高,且富含矿物质、维生素及多酚类抗氧化活性物质,但采后易发生病原菌侵染及褐变,因此采后保鲜是人参果产业亟待解决的问题。本综述从人参果的营养物质、酚类物质及抗氧化能力等进行概述。对人参果采后果实颜色、呼吸作用、碳水化合物和质地变化等影响果实采后生理特性的关键因子做了详细介绍,并对采后低温、气调及其他贮藏保鲜处理方式进行综述。同时指出人参果在营养成分开发和贮藏保鲜中存在的问题并对今后研究作了展望。

Abstract:Pepino is also called mellow eggplant,which it has high moisture,is rich in mineral,vitamin and polyphenol antioxidant active substances,but it is prone to pathogen infection after harvesting. In order to solve the problem of post-harvest preservation in the pepino industry,we provided an overview on nutrients,phenolic substances,and antioxidant capacity in pepino,and described the details about the key factors affecting the post-harvest physiological characteristics of fruit,such as fruit color,respiration,carbohydrate and texture changes,meanwhile,we introduced the method of post-harvest preservation by controlling temperature,atmosphere and other storage conditions in this review. In summary,the problems of pepino in the development of nutrients and storage and preservation were pointed out and the future research was prospected.
