摘    要:水稻是中国最主要的粮食作物,提高水稻产量和品质对保证中国粮食安全和社会稳定具有重要意义。蛋白质作为稻米中第二大类贮藏物质,其含量的高低及组成与稻米的营养价值、食味性和产量等都有着密切联系。综述了前人有关水稻蛋白质种类、氨基酸组成及其与产量和品质关系的研究,并分析了生态因子和栽培措施对稻米蛋白质的影响,以期为提高水稻产量,改善稻米品质的研究提供参考。
