微波加热法测定苦杏仁水分含量的研究

摘    要:利用微波加热法快速、便捷、加热均匀、成本低的特点,采用不同微波加热功率、不同加热时间,对不同含水量、不同粒度的苦杏仁进行含水量测定,并与国标“低恒温烘箱法”进行比较,以期得到微波加热法测定苦杏仁水分的最适条件,结果表明,“微波加热法”"测定苦杏仁水分含量的最适条件为:当水分含量≤8%,粒度1/4粒时,采用微波炉解冻档(259 W)加热,加热时间10 min。

Abstract:Microwave heating method was adopted to dry the kernels of bitter almond with different sizes and water contents. Compared with national standard method "low homeothermal oven method ", this method was time saving, convenient, uniform heating, and low cost. The suitable drying parameters were determined as follows: heating the samples to be deternined with the water content of ≤8% and granularity 1/4 in the microwave oven(259 W)for 10 minutes.
