摘    要:自2019年起我国出口东南亚地区保鲜水果的企业必须获得ISO 22000食品安全管理体系证书,时值ISO 22000体系2018版实施,出口保鲜水果企业面临专业技术人员缺乏,存在危害分析不充分、控制措施制订不合理、产地管理不到位、设备自动化程度低等一系列的问题.本文针对以上问题,进行了深入剖析,介绍了ISO 22000在出口保鲜水果生产中的应用,建立了危害控制计划,制定了关键控制点和操作性前提方案,为保障出口水果的食用安全,出口企业顺利获证奠定了基础.

Abstract:Since 2019, Chinese companies exporting fresh fruits to Southeast Asia must obtain ISO 22000 food safety management system certificate. It was the time when ISO 22000: 2018 system was implementing, enterprises exporting fresh fruits was faced with a series of problems: such as lack of professional and technical personnel, insufficient hazard analysis, and unreasonable formulation of control measures, inadequate origin management and low equipment automation. This paper conducts an in-depth analysis on the above problems, introduces the application of ISO 22000 in the production of export fresh-keeping fruits, establishes a hazard control plan, formulates key control points and operational prerequisite programs, which laid the foundation for ensuring the safety of exported fruits and obtaining the certificate successfully for export enterprises.
