HACCP在生猪屠宰分割加工流程中的应用

摘    要:将HACCP体系应用于生猪屠宰分割的加工流程中,并对加工流程中各工序的生物、化学和物理危害进行了一系列的评估。通过对潜在风险的分析,确定了关键控制点、纠偏措施和验证方法,并建立了HACCP计划表。通过对生猪屠宰分割的加工全过程实施有效控制,使原料肉的品质有了可靠保障。

Abstract:HACCP System was applied to the swine processing Factory,Biological,chemical and physical haz?ards in its process were assessed.Based on the potential hazards analysis,the critical control points,correc?tive actions and verification procedures were identified,and the HACCP plan form was established.Through the implementation of effective control on the whole process of swine processing factory,the reliable guaran?tee of raw meat quality was provided.
