薄壳山核桃种仁成熟过程中生育酚动态变化研究

摘    要:生育酚是薄壳山核桃种仁中重要的抗氧化活性成分。为揭示薄壳山核桃种仁成熟过程中生育酚的动态变化情况,选择‘波尼’等5个国内主栽品种,对其果实发育后期(盛花后115~175 d)种仁中α-、γ-、δ-生育酚的含量进行测定,并进行主成分分析和相关性分析。结果表明:薄壳山核桃种仁中γ-生育酚的含量最高,其次是δ-生育酚,α-生育酚含量最低;各生育酚均在种仁发育早期含量高,随种仁发育含量逐渐降低;不同品种的生育酚含量存在显著差异,且在种仁发育早期差异更明显;各生育酚指标间均极显著相关。

Abstract:Tocopherol is an important antioxidant component in oil of pecan kernel.In order to elucidate dynamic changes of the tocopherol content in pecan kernel during mature and provide experimental data for future studies on quality formation mechanism and quality breeding,five cultivars including Pawnee,Stuart,Wichita,Jinhua and Shaoxing were sampled dynamically(115~175 d).The contents ofα-,γ-,δ-tocopherol were measured,principal component analysis(PCA)and correlation analysis were carried out too.The results showed:The content ofγ-tocopherol was the highest,follow byδ-tocopherol,and the content ofα-tocopherol was the lowest in pecan kernel;The contents ofα-,γ-,δ-tocopherol were highest at the early stages of kernel development,decreased along with kernel mature,which informed that tocopherol were synthesis in large quantity at the early stages of kernel development,and diluted by the increased oil or transferred into other metabolites;Significant variations existed among the tocopherol contents of different cultivars,while these variations were huge at the early stages of kernel development and decreased when mature;all tocopherol variations were extremely significant correlated.
