摘    要:[目的]研究泡核桃壳棕色素的最佳提取条件及粗提色素的稳定性。[方法]以漾濞泡核桃壳为原料,研究浸提温度和时间对色素提取效果的影响,确定最佳提取条件,并对粗提色素进行了稳定性试验。[结果]色素的最佳提取条件为:在75℃时,用1%NaOH提取3次,每次浸提时间为2h。在此条件下,色素的提取率较高,达31%。粗提色素的稳定性试验表明,该色素在酸性条件下稳定,有一定的耐光性,对还原剂的耐受性较强,但对氧化剂的耐受性较差,不适宜高温处理,且不同金属离子对色素有不同影响。[结论]该研究为泡核桃壳的推广应用提供了理论基础和实验依据。

Study on the Extraction and Stability of Brown Pigment from the Shell of Juglans Sigillata

Abstract:[Objective] The research aimed to study the optimum extraction condition and the stability of brown pigment from the shell of Juglans Sigillata.[Method] The shell of Juglans Sigillata which was from Yangbi was the material.The influence of extraction temperature and time on the extraction effect was studied,and the optimum extraction condition was determined.In addition,the stability test of pigment was carried out.[Result] The optimum extraction condition of pigment was that 1% NaOH was used to extract 3 times in 75 ℃,and the extraction time was 2 h at a time.In the condition,the extraction yield of pigment was higher and reached 31%.The stability test of pigment showed that it was stable in the acidic condition and had the certain photostability.The tolerance of pigment to the reducing agent was strong but to the oxidant was worse.It wasn't suitable to be treated in the high temperature,and the different metal ions had the different influence on the pigment.[Conclusion] The research provided the theory basis and the experimental evidence for the popularization and application of Juglans Sigillata shell.
