Abstract:High tension electric field treatment as a method for apples to be kept fresh at normal atmospheric temperature were studied. The optimal intensity and time of the treatment were selected after experiments. The biochemical indices of the apples in the optimal treatment group and control group were tested. The results showed that apples treated with a given intensity of direct high tension electric field for proper time have elongated the shelf-life for about 20 days more than the controls. The melhod could be used for preservation of other fruits and vegetables.
