摘    要:双孢蘑菇营养丰富,保健功能强,但由于双孢蘑菇的含水量高、组织柔软,在贮藏过程中极易受到损伤及腐败,如贮藏温度、湿度、pH、气体成分、金属离子等外部因素以及一些内部因素等都会影响双孢蘑菇的贮藏时间.主要综述了影响双孢蘑菇贮藏期的各种影响因素,以期为双孢蘑菇的保鲜技术提供借鉴、参考与新的思路.

Abstract:Agaricus bisporus is rich in nutrition and has strong health function. But it has high water content, soft tissue, and it is easy to be damaged and corrupt during storage period. The external factors, like temperature, humidity, pH, gas composition, metal ions and so on, as well as the internal factors would affect storage period of Agaricus bisporus. This paper introduces influencing factors of storage period of Agaricus bisporus, which will provide reference and new ideas for preservation technology of Agaricus bisporus.
