食用菌冷链物流中杂菌交叉污染风险控制措施

摘    要:基于现有研究成果,提出一种食用菌冷链物流中杂菌交叉污染风险控制措施。研究乡村产地构建微型冷库,分析预冷后的食用菌储藏模式,构建由订货系统与配送系统构成的食用菌冷链信息系统,通过该系统实现食用菌冷链的产品即时配送,缩短配送时间,降低杂菌交叉污染风险。集成无线传输、电子地图、温度检测、GPS技术,形成开放式食用菌运输定位监控平台,对食用菌冷藏车资源实施定位跟踪管理;在食用菌的冷链物流中,结合使用多种保鲜技术并对该食用菌冷链物流中杂菌交叉污染风险控制措施进行分析,比较实施措施后与实施措施前猴头菇冷链物流的杂菌交叉污染几率,试验结果证明实施食用菌冷链物流中杂菌交叉污染风险控制措施能够有效控制食用菌冷链物流中杂菌交叉污染风险。

Abstract:Based on the existing research results,a risk control measure for cross-contamination of miscellaneous bacteria in cold chain logistics of edible fungi is proposed.This paper studies on the construction of mini cold storage in rural areas,analyzes the storage mode of edible fungi after precooling,and constructs the edible fungi cold chain information system composed of ordering system and distribution system.Through this system,the instant distribution of edible fungi cold chain products is realized,the distribution time is shortened,and the risk of cross-contamination of miscellaneous bacteria is reduced,wireless transmission,electronic map,temperature detection and GPS technology are integrated to form an open type.In the cold chain logistics of edible fungi,combined with the use of a variety of fresh-keeping technologies,and analyzed the risk control measures of cross-contamination in the cold chain logistics of edible fungi,compared the probability of cross-contamination of the cold chain logistics of Hericium erinaceus after the implementation of the measures with that before the implementation of the measures.The test results show that it is true.The risk control measures can effectively control the risk of cross-contamination.
